and one more pumpkin dish that is too easy to need a recipe. add some olive oil and balsam vinegar to these four main ingredients and you are done. after less than 20 minutes the salad is ready to be serve.

this salad is one of the classic pumpkin dishes i have every pumpkin season. the sweetness of the pumpkin goes perfectly together with the saltiness of the prosciutto and the pecorino cheese. the rocket adds some crunchiness and spiciness. you can top the salad with some roasted pumpkin seeds. they look nice and add some extra crunch.

3-4 slices pumpkin per person
1 tsp coriander seeds
1 small dried chili
salt
pepper
3-4 slices prosciutto per person
1 handful rocket per person
pecorino cheese
pumpkin seeds (optional)
olive oil
balsam vinegar

preheat the oven to 200°C.

cut the pumpkin into slices and remove the skin. pour the pumpkin slices on a baking tray, lined with baking paper. pour the spices in a mortar and crack roughly. rub the pumpkin with some olive oil and spices and bake for 20 minutes till tender.

in the meantime wash the rocket, roast the pumpkin seeds in a pan and grate the pecorino cheese.

combine two third olive oil and one third balsam vinegar and season with salt and pepper. marinate the rocket in the dressing, before serving.

arrange some slices prosciutto on each plate, add the baked pumpkin and a handful of rocket. finally sprinkle over some grated cheese and some roasted pumpkin seeds if you like. drizzle over the remaining dressing and serve.

1 kleine getrocknete chili
salz
pfeffer
3-4 scheiben prosciutto pro person
1 handvoll ruccola pro person
pecorino käse
kürbiskerne (optional)
olivenöl
balsamico

den ofen auf 200° C vorheizen.

den kürbis in spalten schneiden und die schale abschneiden. ein backblech mit backpapier auselgen und den kürbis darauf legen. die gewürze im mörser grob zerstoßen. den kürbis mit olivenöl und den zerstoßenen gewürzen einreiben und etwa 20 minuten backen, bis der kürbis weich ist.

in der zwischenzeit den ruccola waschen, die kürbiskerne in einer pfanne anröstend den pecorino grob reiben.

olivenöl und balsamico im verhältnis zwei drittel olivenöl und ein drittel balsamico mischen. etwas salz und pfeffer dazu und den ruccola vor dem servieren damit marinieren.

auf jedem teller ein paar scheinen prosciutto und gebackenen kürbis arrangieren. je eine handvoll ruccola darauf setzen. zum schluss geriebenen pecorino und geröstete kürbiskerne nach belieben darüber geben. das verbliebene dressing verteilen und servieren.
