these cuties should not be underestimated! they are something between sacher torte and these oreo cookies which are coated with chocolate. or maybe they are sacher torte in oreo cookie size. but anyhow, they are chocolatey, they are sweet and they are irresistible.
as always in the past weeks i was looking for some eatable gifts i could prepare with homegrown stuff and found something new to do with my failed apricot jam i cooked with sugar instead of jam sugar. the jam was too sweet to eat it on bread so that i decided to use it for baking only.
last year i did linzer augen with apricot jam. this year i combined the apricot jam with chocolate. my austrian husband already knew this small chocolate cakes but i discovered it on valentinas kochbuch recently. but we both are very happy with the result.
so enjoy and try out by yourself.
70 g flour
a pinch of salt
140 g butter
70 g breadcrumbs
70 g sugar
1 package vanilla sugar
70 g ground hazelnuts
apricot jam
chocolate icing
combine flour, salt and butter first. add breadcrumbs, sugar, vanilla sugar and hazelnuts and combine to the pastry. allow to rest in the fridge for about 30 minutes.
preheat the oven to 180° C. roll the pastry and cut out biscuits. bake for 8-10 minutes. put together two biscuits each with a teaspoon apricot jam in-between.
melt the chocolate icing and coat the biscuits. wait until dry.

70 g mehl
prise salz
140 g butter
70 g semmelbrösel
70 g zucker
1 päckchen vanillezucker
70 g gemahlene haselnüsse
aprikosen (marillen) marmelade
schokoladenglasur
mehl, salz und butter miteinander vermengen. semmelbrösel, zucker, vanillezucker und haselnüsse dazu geben und alles zu einem teig verkneten. im kühlschrank 30 minuten ruhen lassen.
den ofen auf 180° C vorheizen. den teig ausrollen und kekse ausstechen. 8-10 minuten backen. auf eine hälfte der kekse einen teelöffel marmelade geben und die zweite hälfte der kekse darauf setzen.
die schokoladenglasur schmelzen und über die kekse geben. die glasur trocknen lassen.
