i already learned a lot about italian ways to combine ingredients with pasta i never thought about before. pasta and potatoes for example, pasta cooked directly in pumpkin or courgette soup instead of water and this time i learned how excellent it tastes to combine pasta and lentils.
it’s a perfect dish for the beginning of autumn when it is getting a bit colder outside and your mood is in favor of a dish warming you a bit from inside rather than having a salad. the very last tomatoes are ideal for that. often they aren’t that nice looking any more and not that sweet like the summer tomatoes have been, but inside the pasta, tomatoes and lentil dish this doesn’t matter at all.
i found the recipe in the pasta book of lorenza de’ medici where many treasures are still waiting to be discovered.
for 4:
120 g lentils
salt
450 g tomatoes
2 handful of borage
4 tbs olive oil
200g short pasta like ditalini
allow the lentils to soak in water over night.
pour the tomatoes in a large pan, add boiling water and wait for 2 minutes. remove the tomatoes from the water, rinse with cold water and peel them. cut the tomatoes into pieces and remove the kernels if you want to. if you do not have fresh tomatoes you can also take the canned ones with their juice.
drain the lentils and wash them. now you can pour the washed lentils, chopped tomatoes, 1 1/2 liters of water and olive oil in a lagre pan. wash the borage and cut into stripes and add to the other ingredients. allow to cook gently for about one hour until the lentils are soft.
finally bring the soup to a boil again and add the pasta. cook the pasta in the soup al dente and serve immediately.

120 g linsen
salz
450 g tomaten
2 handvoll borretsch
4 el olivenöl
200 g kurze pasta zb. ditalini
die linsen über nacht in reichlich wasser einweichen.
die tomaten in einen großen topf geben, mit kochendem wasser übergießen und 2 minuten ziehen lassen. die tomaten aus dem wasser nehmen, kalt abschrecken und die haut abziehen. dann die tomaten in stücke schneiden und wer mag kann auch die kerne entfernen. statt frischen tomaten können auch dosentomaten mit ihrem saft verwendet werden.
die linsen abgießen und waschen. die gewaschenen linsen, die gehackten tomaten, 1 1/2 liter wasser und das olivenöl in einen großen topf geben. den borretsch waschen, in streifen schneiden und dazu geben. alles für eine stunde köcheln bis die linsen weich sind.
zum schluss die suppe noch mal aufkochen und die nudeln dazu geben. die nudeln in der suppe al dente kochen und sofort servieren.
