last time i had a salad with ham, cheese and a creamy dressing was back in the 90´s in a fast food restaurant. but this salad is far away from the trash this memory suggests. and there is absolutely nothing against that combination! peas and crunchy lettuce gives it a fresh drive and the tarragon vinegar makes the dressing a culinary highlight!

i found this nice recipe in the cook and the gardener. which every cooking gardener should  own.

if you don´t have tarragon vinegar, it is easy to prepare yourself. you need some sprigs of tarragon, white wine vinegar and white balsamic vinegar and some days in advance.

one big handful of lettuce per person
one small handful of peeled peas
ham
cheese (gruyere, appenzeller or comté)
some slices of white bread
100 g creme double
parsley
2 tbsp tarragon vinegar
salt
pepper

wash and dry the lettuce. bring some salted water to a boil and blanche the peas for 2-3 minutes. if they are really young you can also eat them raw. pick the ham into pieces and grate the cheese roughly.

heat a pan. cube the white bread and roast until golden.

combine the creme double and the tarragon vinegar for the dressing. wash, dry and chop the parsley and add to the dressing. season with salt and pepper.

combine all the ingredients or serve separately for everybody’s self-service.

eine große handvoll salat pro person
je eine kleine handvoll erbsen
kochschinken
käse (gruyere, appenzeller or comté)
ein paar scheinen weißbrot
100 g creme double
petersilie
2 el estragonessig
salz
pfeffer

den salat waschen und trocknen. etwas gesalzenes wasser zum kochen bringen und die erbsen 2-3 minuten blanchieren. wenn die erbsen noch sehr jung sind, kann man sie auch roh essen. den kochschinken in stücke rupfen und den käse grob reiben.

eine pfanne erhitzen, brot würfeln und golden anrösten.

für das dressing die creme double und den estragonessig vermischen. petersilie waschen und trocknen und grob hacken. petersilie unter das dressing mischen und mit salz und pfeffer abschmecken.

alle zutaten auf tellern anrichten oder separat servieren, damit jeder nach belieben kombinieren kann.
