green tomato chutney

it´s getting cold outside. no good news for the dedicated gardener. before you finish to winterize your garden completely and become sad about all the tomatoes which did not turn red any more this summer, make some green tomato chutney. you can store it like jam and rejoice it for the whole next year at least. i really like it with an good semi-hard cheese like old amsterdam or parmesan and some crisp bread.

1kg green tomatoes
500g appels
2 onions, diced
3 cloves of garlic, diced
1 good piece of ginger, diced
300ml cider vinegar
250g brown sugar
150g raisins
1tb salt
lemon juice

to peel the tomatoes just make a small cut on it´s bottom side and put them for no longer than a minute in some very hot water. rinse with cold water and peel. divide the peeled tomatoes into quarters, remove the cores and chop them.

peel, divide into quarter and clean your apples. sprinkle with lemon juice so that they don’t turn brown. cook the apples, onions, garlic, ginger and the vinegar in a large pan for 10 minutes.

combine the mixture with the tomatoes and simmer for about 40 to 50 minutes until concentrated.

if you are happy with the texture of your chutney just pour it into jars, close them and turn them upside down to create a vacuum. now you can store it – or just enjoy immediately.
