really like we wish it would be, the garden starts to look like summer. as up to now we had almost nothing but asparagus to harvest, we are now going to have courgettes (zucchini), cucumber, beans, peas and i think i already saw a red tomato or two.<!--more--><\/p>\n<p>and i don&#8217;t know about you, but for me it is really a bit like holiday, sitting in front of some of the typical holiday dishes from greece, turkey, italy or spain. zucchini fritters and tzatziki is one of those holiday dishes.<\/p>\n<p>we had this combination first during honeymoon. to be honest i think the zucchini fritters have been my first time ever. they are\u00a0a perfect companion for tzatziki which i had always with bread or meat balls until this journey. but i swear, the fritters are much better. and it is not only because this dish always tastes a bit like blue sky, all-day sunshine, laziness, endless time and love&#8217;s happiness.<\/p>\n<p>but try yourself and don&#8217;t forget to chill a retsina, a special greek white wine!<\/p>\n<p style=\"text-align: center;\">for 2:<\/p>\n<p style=\"text-align: center;\">tzatziki:<br \/>\n250 g greek yoghurt (10%!)<br \/>\n1 cucumber<br \/>\n1-2 cloves of garlic<br \/>\nsalt<br \/>\nolive oil<\/p>\n<p style=\"text-align: center;\">zucchini frittes:<br \/>\n2 medium sized zucchini<br \/>\n2 eggs<br \/>\n3 tbsp flour<br \/>\na small handful feta cheese<br \/>\n3 sprigs\u00a0of mint<br \/>\nsalt<br \/>\npepper<\/p>\n<p style=\"text-align: left;\">to prepare the tzatziki, peel and halve the cucumber. scrap the seeds with the help of a spoone and grate the remaining part of the cucumber. pour the grated cucumber together with a pinch of salt into a bowl and allow to rest for about 15 minutes. after these 15 minutes squeeze out of the cucumber as much liquid as you can, because you don&#8217;t want to have a liquid tzatzki. combine the squeezed cucumber with the yoghurt and crushed garlic. \u00a0you can place the tzatziki in the fridge until serving.\u00a0season to taste with some salt and add some olive oil immediately before serving the tzatziki.<\/p>\n<p style=\"text-align: left;\">to prepare the fritters it is almost the same procedure. if your zucchini\/courgettes are small or medium size you do not have to peel them, but remove seeds. for the zucchini it is important to grate them finely, while it could be more rough for the cucumbers. like the cucumbers you should repeat the salt and squeezing procedure, before combining the zucchini with the eggs, flour, crumbled feta, chopped mint, salt and pepper.<\/p>\n<p style=\"text-align: left;\">heat some oil in a large frying pan and add a tablespoon of the fritters mixture. depending on the size of your pan you can fry four, six or more fritters at the same time. after a few minutes they will become golden. this is the time to turn them to fry them on other side. keep them warm until you&#8217;re done with the entire fritter mixture.<\/p>\n<p style=\"text-align: left;\">serve warm (for greek dishes it is absolutely not necessary to eat things hot, warm is absolutely fine, not to say perfect!) with the tzatziki and some good white bread and if you like, of course with a glass of retsina (greek white wine).<\/p>\n<p style=\"text-align: left;\">enjoy!<\/p>\n<p style=\"text-align: center;\">*********************<\/p>\n<p style=\"text-align: center;\">f\u00fcr 2:<\/p>\n<p style=\"text-align: center;\">tzatziki:<br \/>\n250 g griechischer joghurt (10%!)<br \/>\n1 gurke<br \/>\n1-2 knoblauchzehen<br \/>\nsalz<br \/>\noliven\u00f6l<\/p>\n<p style=\"text-align: center;\">zucchini fritters:<br \/>\n2 mittlere zucchini<br \/>\n2 eier<br \/>\n3 el mehl<br \/>\neine kleine handvoll feta k\u00e4se<br \/>\n3 zweige minze<br \/>\nsalz<br \/>\npfeffer<\/p>\n<p style=\"text-align: left;\">f\u00fcr das tzatziki die gurke sch\u00e4len und halbieren. mit der hilfe eines l\u00f6ffels die kerne herauskratzen und den verbleibenden teil der gurke grob hobeln. damit das tzatziki nicht w\u00e4ssrig wird, sollte die gehobelte gurke f\u00fcr etwa 15 minuten mit einer guten prise salz ruhen. nach den 1 minuten so viel fl\u00fcssigkeit wie m\u00f6glich aus der gurke herausquetschen. die ausgequetschte gurke kann dann mit dem joghurt und dem knoblauch vermischt werden und bis zum servieren im k\u00fchlschrank warten. erst direkt vor dem servieren mit salz abschmecken und etwas oliven\u00f6l hinzuf\u00fcgen.<\/p>\n<p style=\"text-align: left;\">f\u00fcr die fritter wird \u00e4hnlich verfahren. wenn die zucchini klein oder mittel gro\u00df sind, m\u00fcssen sie nicht nicht gesch\u00e4lt, sondern nur entkernt werden. die zucchini sollten unbedingt fein gehobelt werden. wie die gurken sollten die zucchini gesalzen werden, um so viel fl\u00fcssigkeit wie m\u00f6glich aus ihnen herauszuquetschen bevor sie mit den eiern, mehl, zerbr\u00f6seltem feta, gehackter minze, salz und pfeffer gemischt werden.<\/p>\n<p style=\"text-align: left;\">etwas \u00f6l in einer gro\u00dfen pfanne erhitzen und je einen essl\u00f6ffel zucchinimischung ausbacken. je nach pfannengr\u00f6\u00dfe k\u00f6nnen vier, sechs oder mehr fritter gleichzeitig ausgebacken werden. sobald sie sich golden f\u00e4rben, wenden und von der anderen seite backen. die fertigen zucchini fritter warm stellen, bis alles fertig ist.<\/p>\n<p style=\"text-align: left;\">warm (f\u00fcr griechische gerichte ist es absolut nicht notwendig, dass sie hei\u00df sind, warn gen\u00fcgt v\u00f6llig, um nicht zu sagen, ist geradezu perfekt!) mit tzatziki und einem guten hellen brot servieren. und wer mag trinkt dazu einen retsina (griechischer wei\u00dfwein).<\/p>\n<p style=\"text-align: left;\">guten
