{"id":6040,"date":"2017-06-17T20:41:31","date_gmt":"2017-06-17T18:41:31","guid":{"rendered":"http:\/\/foodiesgarden.net\/?p=6040"},"modified":"2017-06-17T21:02:39","modified_gmt":"2017-06-17T19:02:39","slug":"ragout-of-asparagus-and-morels-spargel-morchel-ragout","status":"publish","type":"post","link":"http:\/\/foodiesgarden.net\/?p=6040","title":{"rendered":"ragout of asparagus and morels \/\/ spargel-morchel ragout"},"content":{"rendered":"<p><a href=\"http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6050\" src=\"http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1.jpg\" alt=\"\" width=\"2312\" height=\"1535\" srcset=\"http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1.jpg 2312w, http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1-300x199.jpg 300w, http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1-768x510.jpg 768w, http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1-1024x680.jpg 1024w, http:\/\/foodiesgarden.net\/wp-uploads\/2017\/06\/asparagus-morel-ragout_bearbeitet-1-452x300.jpg 452w\" sizes=\"auto, (max-width: 2312px) 100vw, 2312px\" \/><\/a><\/p>\n<p>in the last post i told you about our neglected garden and that there is nothing growing yet but weeds and spring onions. fortunately\u00a0there is this one vegetable which is growing year by year without us doing anything&#8230; asparagus<!--more--><\/p>\n<p>asparagus helps\u00a0us get through the hard times of a gardener during which the garden requires a lot of work but you don&#8217;t get anything in return.<\/p>\n<p>there is a remarkable collection of asparagus recipes here on this blog. so take advantage of the archive and enjoy. but there is more\u00a0&#8211; it seems there are endless fantastic asparagus creations out there. and here you will find one more. ragout with white asparagus and morels.<\/p>\n<p>a couple of years ago i cooked something like this with my best friend and it was delicious. but unfortunately i have no idea where we found\u00a0the recipe back then. what i discovered in all my unsorted paper recipe archive (long before the digital times) was this version of asparagus-morels ragout which goes with some peas we luckily still had in our freezer. it was published in the german ZEIT magazine kochquartett and was inspired by\u00a0anna schwarzmann.<\/p>\n<p>the morels add to this\u00a0dish an\u00a0intense flavor and are a welcomed contrast to the fine taste of asparagus and the creamy ragout texture. so go for it if you feel like offering yourself an alternative to sauce hollandaise.<\/p>\n<p style=\"text-align: center;\">for 6:<\/p>\n<p style=\"text-align: center;\">1 kg asparagus<br \/>\n200 g peas<br \/>\nsalt<br \/>\nsugar<br \/>\nbutter<\/p>\n<p style=\"text-align: center;\">butter<br \/>\n20 fresh morels (or dried once work as well)<br \/>\n4 cl sherry<\/p>\n<p style=\"text-align: center;\">50 g butter<br \/>\n30 g flour<br \/>\n500 ml asparagus fond<br \/>\n200 ml cream<br \/>\nlemon<br \/>\nnutmeg<\/p>\n<p style=\"text-align: center;\">chervil<\/p>\n<p style=\"text-align: center;\">cooked potatoes<\/p>\n<p style=\"text-align: left;\">bring some salted water to a boil and blanch the peas. wash and peel the asparagus and cook for some minutes with a pinch of salt, a pinch of sugar and some butter. rinse with cold water and cut into 5 cm pieces.<\/p>\n<p style=\"text-align: left;\">if you use fresh morels you have to clean them. if you have dried morels, you only have to soak them in warm water for about 15 minutes. in both cases you have to dry them carefully before you&#8217;re going to saut\u00e9 them in some butter. add the sherry and bring to a boil. set aside.<\/p>\n<p style=\"text-align: left;\">melt the 50 g butter in a sauce pan. add the flour while stirring continuously. add the asparagus fond and bring to a boil while you continue to stir.
