there is not a lot to harvest yet. but we have a lot of asparagus. some forgotten greens like chard, spinach, abandoned lettuces and rocket and of course, the spring onions.<!--more--><\/p>\n<p>and as after two months in asia there is a huge desire for asian food and especially soups there is an excellent fit\u00a0for the spring onions in\u00a0this super yummy udon noodle soup. the broth is absolutely delicious, the beef soft and everybody with a favor for\u00a0udon noodles doesn&#8217;t need more for knowing that this soup is a must.<\/p>\n<p>the recipe is from the<em> <a href=\"https:\/\/www.amazon.com\/Tokyo-Cult-Recipes-Maori-Murota\/dp\/0062446681\">tokyo cookbook by maori murota<\/a><\/em> and tastes absolutely authentically.<\/p>\n<p>so enjoy while waiting for more greens in the garden.<\/p>\n<p style=\"text-align: center;\">for 4:<\/p>\n<p style=\"text-align: center;\">amani beef:<br \/>\n400 g beef (fat)<br \/>\n2 tbsp soy sauce<br \/>\n1 tbsp cane sugar<br \/>\n2 tbsp mirin (japanese sweet rice wine)<br \/>\n200 ml dashi (kind of fish broth)<\/p>\n<p style=\"text-align: center;\">soup:<br \/>\n1,2 l dashi<br \/>\n3 tbsp mirin<br \/>\n3 tbsp soy sauce<br \/>\n1 tsp salt<br \/>\n2 tbsp sake (japanese rice wine)<\/p>\n<p style=\"text-align: center;\">320 g dried udon noodles or 4 packages cooked ones<\/p>\n<p style=\"text-align: center;\">spring onions<\/p>\n<p style=\"text-align: left;\">cut the beef in thin stripes. pour the beef together with the soy sauce, sugar and mirin in a pan. reduce the liquid while stirring constantly over medium heat. add the dashi and cook for five minutes.<\/p>\n<p style=\"text-align: left;\">in the meantime combine all the ingredients for the soup in a large pan and bring to a boil. cook the udon following the instructions. wash and clean the spring onions and finely cut the green parts.<\/p>\n<p style=\"text-align: left;\">pour some of the udon noodles in each serving bowl. add some broth and top every bowl with some beef and spring onions.<\/p>\n<p style=\"text-align: left;\">enjoy your trip to asia!<\/p>\n<p style=\"text-align: center;\">*********************<\/p>\n<p style=\"text-align: center;\">f\u00fcr 4:<\/p>\n<p style=\"text-align: center;\">amani rindfleisch:<br \/>\n400 g rindfleisch (m\u00f6glichst fett)<br \/>\n2 el sojasauce<br \/>\n1 el rohrzucker<br \/>\n2 el mirin (s\u00fc\u00dfer japanischer reiswein)<br \/>\n200 ml dashi (eine art fischbr\u00fche)<\/p>\n<p style=\"text-align: center;\">suppe:<br \/>\n1,2 l dashi<br \/>\n3 el mirin<br \/>\n3 el sojasauce<br \/>\n1 tl salz<br \/>\n2 el sake (japanischer reiswein)<\/p>\n<p style=\"text-align: center;\">320 g getrocknete udon nudeln or 4 packungen gekochte<\/p>\n<p style=\"text-align: center;\">fr\u00fchlingszwiebeln<\/p>\n<p style=\"text-align: left;\">das rindfleisch in d\u00fcnne streifen schneiden und zusammen mit der sojasauce, dem zucker und mirin in einen topf geben. unter r\u00fchren bei mittlere hitze reduzieren. dann dashi dazu geben und f\u00fcnf minuten k\u00f6cheln lassen.<\/p>\n<p style=\"text-align: left;\">in der zwischenzeit alle zutaten f\u00fcr die suppe in einen gro\u00dfen topf geben und aufkochen lassen. die udon nudeln nach den anweisungen auf der packung kochen. die fr\u00fchlingszwiebeln waschen und das gr\u00fcne in feine streifen schneiden.<\/p>\n<p style=\"text-align: left;\">in jede suppenschale udon nudeln geben, mit br\u00fche aufgie\u00dfen und Rindfleisch und fr\u00fchlingszwiebeln oben darauf geben.<\/p>\n<p
