ingredients you will find in almost every asparagus dish. egg is such an ingredient, but also butter, lemon and ham. this asparagus dish is one more of the egg-things, but together with the rocket and the avocado it tastes surprisingly new!<!--more--><\/p>\n<p>it looks gorgeously green and somehow you can also taste this green. i loved the combination of asparagus, rocket, spring onion, lemon and avocado. and except of the avocado and lemon, all the things are growing in the garden right now and yes, you can grow it by yourself: <em><a href=\"http:\/\/foodiesgarden.net\/?p=4646\" target=\"_blank\">asparagus<\/a><\/em>,<em><a href=\"http:\/\/foodiesgarden.net\/?p=941\" target=\"_blank\"> rocket<\/a><\/em>, <em><a href=\"http:\/\/foodiesgarden.net\/?p=1498\" target=\"_blank\">spring onion<\/a><\/em>.<\/p>\n<p>as the asparagus will be steamed for three minutes only, this dish is very quick to prepare. the biggest step is poaching the eggs. but if you practice it for a while, it will be a piece of cake.<\/p>\n<p>i found the idea on pinterest some days ago, but as <em><a href=\"http:\/\/www.kwestiasmaku.com\/zielony_srodek\/szparagi\/salatka_ze_szparagami_jajkiem_w_koszulce\/przepis.html\" target=\"_blank\">the blog<\/a> <\/em>where the pin was from, is in polish i just tried to figure out by the picture how the recipe could be. however, not matter if\u00a0i am right or wrong in my interpretation, the result is great!<\/p>\n<p style=\"text-align: center;\">for 2:<\/p>\n<p style=\"text-align: center;\">a bunch of green asparagus<br \/>\n1 avocado<br \/>\n2 spring onions<br \/>\n1 handful rocket<br \/>\n2 eggs<br \/>\n1 tsp white wine vinegar<br \/>\n1 lemon<br \/>\n4 tbsp olive oil<br \/>\nsalt and pepper<\/p>\n<p style=\"text-align: left;\">cut off the lower parts of the asparagus and peel the lower third of each stalk. steam the asparagus for 3 minutes. the asparagus should still be crunchy. rinse with very cold water to keep the green color. halve lengthwise.<\/p>\n<p style=\"text-align: left;\">wash the rocket and the spring onion. slice the spring onion very thinly. halve the avocado and slice each halves lengthwise. add the juice of halve a lemon to avoid discolorations.<\/p>\n<p style=\"text-align: left;\">arrange the asparagus, rocket, spring onion and avocado on 2 serving plates before you start poaching the eggs. therefore bring one liter of water to a boil. use a small pan, this will help to keep the egg together while poaching. slightly salt the water and add one teaspoon white wine vinegar. reduce the heat to simmer. crack the first egg in a cup. stir the water until it builds a whirl in the middle and let the egg slide, quite rapidly, directly into the center of the whirl. poach for about 3 minutes, until the egg white turns\u00a0firm and the yolk stays soft. remove the egg from the water with the help of a slotted spoon, rinse and set aside. repeat with the second egg.<\/p>\n<p style=\"text-align: left;\">arrange the poached eggs on top of the salad and sprinkle olive oil, salt, some more lemon juice and pepper.<\/p>\n<p style=\"text-align: left;\">enjoy!<\/p>\n<p style=\"text-align: center;\">*********************<\/p>\n<p style=\"text-align: center;\">f\u00fcr 2:<\/p>\n<p style=\"text-align: center;\">ein bund gr\u00fcner spargel<br \/>\n1 avocado<br \/>\n2 fr\u00fchlingszwiebeln<br \/>\n1 handvoll rucola<br \/>\n2 eier<br \/>\n1 tl wei\u00dfweinessig<br \/>\n1\/2 zitrone<br \/>\n4 el oliven\u00f6l<br \/>\nsalz und pfeffer<\/p>\n<p>die unteren enden vom spargel abschneiden und das untere drittel sch\u00e4len. den spargel drei minuten d\u00e4mpfen. er sollte noch knackig sein. den spargel unter kaltem wasser abschrecken, damit er seine sch\u00f6ne gr\u00fcne farbe beh\u00e4lt. l\u00e4ngs halbieren.<\/p>\n<p>rucola und fr\u00fchlingszwiebeln waschen. die fr\u00fchlingszwiebeln in sehr d\u00fcnne streifen schneiden. die avocado halbieren und l\u00e4ngs in scheiben schneiden und sofort mit dem saft einer halben zitrone betr\u00e4ufeln, um verf\u00e4rbungen zu vermeiden.<\/p>\n<p>den spargel, ruccola, fr\u00fchlingszwiebeln und die avocado in zwei schalen aufteilen, bevor die eier pochiert werden. dazu einen liter wasser zum kochen bringen. am besten einen kleinen topf verwenden, da dadurch das ei beim pochieren besser zusammenh\u00e4lt. das wasser leicht salzen und einen teel\u00f6ffel wei\u00dfweinessig hinzuf\u00fcgen. die hitze reduzieren, so dass das wasser nur noch leicht k\u00f6chelt. das erste ei in eine tasse schlagen. mit einem l\u00f6ffel das k\u00f6chelnde wasser r\u00fchren bis ein wirbel entsteht und direkt in diesen wirbel das ei gleiten lassen. das ei drei minuten pochieren. das eiweiss sollte fest und das eigelb noch fl\u00fcssig sein. das ei mit einer Schaumkelle herausnehmen und abtropfen lassen. mit dem zweiten ei genauso verfahren.<\/p>\n<p>die pochierten eier jeweils auf dem salat arrangieren und oliven\u00f6l, salz, etwas mehr zitronensaft und pfeffer dar\u00fcber geben.<\/p>\n<p>e voil\u00e0 und guten
