(yippi yeah) i have to\u00a0hurry up to share this fabulous kale recipe with you. i hope you will still find some kale to try it this season. it is a combination of crunchy kale, quinoa, lemon juice, garlic, spring onions, goat&#8217;s cheese and pine nuts. perfect!<!--more--><\/p>\n<p>the kale is steamed for only some minutes to remain\u00a0crunchy and to keep the green color. the moment when the hot kale and quinoa meets the garlic, lemon and walnut oil is like heaven. don&#8217;t miss to take a deep breath.<\/p>\n<p>it&#8217;s an equally great moment when the goat&#8217;s cheese melts\u00a0a little bit while being combined with all the hot ingredients. so enjoy the kale and quinoa pilaf immediately to enjoy all this together.<\/p>\n<p>i discovered the recipe on <em><a href=\"http:\/\/food52.com\/recipes\/2434-one-pot-kale-and-quinoa-pilaf\" target=\"_blank\">food52<\/a><\/em>, which, by the way, is always a good idea if you&#8217;re looking for something very good.<\/p>\n<p>the kale and quinoa pilaf is best as long as it is warm but also nice as a cold office lunch the next day.<\/p>\n<p style=\"text-align: center;\">for 2-4:<\/p>\n<p style=\"text-align: center;\">1 cup quinoa<br \/>\n2 cups water<br \/>\na bunch of kale<br \/>\n1 lemon<br \/>\n2 spring onions<br \/>\n1 tbsp walnut oil<br \/>\nsome olive oil (optional)<br \/>\n1 handful pine nuts<br \/>\ncrumbled goat&#8217;s cheese<br \/>\nsalt and pepper<\/p>\n<p style=\"text-align: left;\">bring the water to a boil, add a pinch of salt and quinoa. reduce the heat, cover and simmer for 10 minutes. in the meantime, wash and roughly chop the kale. pour the kale on top of the quinoa, re-cover and simmer for 5 minutes. then turn off the heat and allow to steam for another 5 minutes.<\/p>\n<p style=\"text-align: left;\">in-between roast the pine nuts. wash and finely chop the spring onions. put\u00a0both, together with half of the lemon juice, lemon zest, walnut oil and crumbled goat&#8217;s cheese, in a large bowl.<\/p>\n<p style=\"text-align: left;\">when the quinoa and kale are done, pour them in the bowl as well and toss to combine. season\u00a0to your desire with salt, pepper and the remaining lemon juice. if you like, you can also add a splash of olive oil.<\/p>\n<p style=\"text-align: left;\">enjoy!<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">f\u00fcr 2-4:<\/p>\n<p style=\"text-align: center;\">1 tasse quinoa<br \/>\n2 tassen wasser<br \/>\n1 bund gr\u00fcnkohl<br \/>\n1 zitrone (unbehandelt)<br \/>\n2 fr\u00fchlingszwiebeln<br \/>\n1 el walnuss\u00f6l<br \/>\netwas oliven\u00f6l (optional)<br \/>\n1 handvoll pinienkerne<br \/>\nziegenk\u00e4se, zerbr\u00f6selt<br \/>\nsalz und pfeffer<\/p>\n<p style=\"text-align: left;\">das wasser zum kochen bringen. eine gute prise salz und quinoa hinzuf\u00fcgen und 10 minuten mit deckel leicht k\u00f6cheln lassen. inzwischen den gr\u00fcnkohl waschen und grob hacken. den gr\u00fcnkohl auf das quinoa geben, den topf wieder abdecken und weitere 5 minuten k\u00f6cheln lassen. dann den herd ausschalten und noch mal 5 minuten d\u00e4mpfen.<\/p>\n<p style=\"text-align: left;\">inzwischen die pinienkerne anr\u00f6sten. die fr\u00fchlingszwiebeln waschen und fein hacken. beides mit der h\u00e4lfte des zitronensaftes, der zitronenschale, walnuss\u00f6l und dem zerbr\u00f6selten ziegenk\u00e4se in eine gro\u00dfe sch\u00fcssel geben. mit salz, pfeffer und nach wunsch dem restlichen zitronensaft
