salted caramel are another variation of the new year`s tradition\u00a0i introduced to you two years ago. maybe they are a little bit more advanced than <em><a href=\"http:\/\/foodiesgarden.net\/?p=2524\" target=\"_blank\">the classics ones which are filled with jam<\/a><\/em>, but they are much easier to prepare.<!--more--><\/p>\n<p>i hope you all had a great sylvester party last night or you celebrated the new\u00a0year with your beloved ones. maybe you had a fabulous dinner together or passed the hours with good thoughts about the last and the new year.<\/p>\n<p>no matter how\u00a0you spent last night, these apple fritters, which i discovered at <em><a href=\"http:\/\/www.thesugarhit.com\/2014\/03\/apple-fritters-with-salted-caramel.html\" target=\"_blank\">the sugar hit<\/a><\/em>, will be a good choice for your new year&#8217;s day, whether\u00a0you have a hangover or not, slept long or had an early winter walk &#8230;<\/p>\n<p>i wish package dry yeast<br \/>\n1 1\/2 cups flour<br \/>\n2 tbsp sugar<br \/>\n1\/4 tsp baking powder<br \/>\n1 pinch of salt<br \/>\n1 egg yolk<br \/>\n1 tsp vanilla<br \/>\n2 apples<br \/>\n2 tbsp sugar<br \/>\n1 tsp cinnamon<br \/>\noil for frying<\/p>\n<p style=\"text-align: center;\">salted caramel:<br \/>\n1 cup sugar<br \/>\n75 g butter<br \/>\n1\/2 cup cream<br \/>\n1 tsp sea salt<\/p>\n<p style=\"text-align: left;\">heat the milk and the butter until just warm. add the yeast and stir in. place flour, sugar, baking powder and salt in a large bowl and mix. add the yeast mixture, egg yolk and vanilla and stir for 5 minutes. the dough should be smooth and elastic. maybe you have to add some more flour.<\/p>\n<p style=\"text-align: left;\">cover with a kitchen towel and allow to rest until it doubled its size. in the meantime peel the apples, remove the kernel and cut the apples into pieces. combine them with 2 tbsp sugar and cinnamon and cook in a pan until they start to become soft. there should be no more liquid in the pan. set aside and allow to cool down.<\/p>\n<p style=\"text-align: left;\">put the dough on a floured surface and pat it out to a 25 cm square. pour the apples in the center and fold the edges of the dough over. fold one or two times more until the apples have disappeared and are well distributed. divide the dough into six portions and place on a baking tray lined out with baking paper. cover with a kitchen towel and allow to rest for 20-30 minutes.<\/p>\n<p style=\"text-align: left;\">while the dough is rising you can prepare the caramel. heat the sugar and a splash of water in a small pan over medium heat. do not stir. when the sugar turns golden remove from heat and add the butter. stir carefully and add also the cream. place back on the\u00a0heat for halve a minute to thicken a bit. set aside and add the sea salt.<\/p>\n<p style=\"text-align: left;\">heat the frying oil in a pan. it should be enough to cover halve of a apple fritters. pour the apple fritters carefully in the pan and fry for about 2 minutes each side until they becoming dark golden.<\/p>\n<p style=\"text-align: left;\">drain on a paper towel and serve with the salted caramel.<\/p>\n<p style=\"text-align: left;\">enjoy!<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">apfelpfannkuchen\/berliner\/krapfen:<\/p>\n<p style=\"text-align: center;\">1\/3 tasse milch<br \/>\n1 el butter<br \/>\n1 packung trockenhefe<br \/>\n1 1\/2 tassen mehl<br \/>\n2 el zucker<br \/>\n1\/4 tl backpulver<br \/>\n1 prise salz<br \/>\n1 eigelb<br \/>\n1 tl vanillearoma<br \/>\n2 \u00e4pfel<br \/>\n2 el zucker<br \/>\n1 tl zimt<br \/>\n\u00f6l zum frittieren<\/p>\n<p style=\"text-align: center;\">karamel:<\/p>\n<p style=\"text-align: center;\">1 tasse zucker<br \/>\n75 g butter<br \/>\n1\/2 tasse sahne\/obers<br \/>\n1 tl meersalz<\/p>\n<p style=\"text-align: left;\">milch und butter erw\u00e4rmen und dann die hefe einr\u00fchren. mehl, zucker, backpulver und die \u00a0prise salz in einer gro\u00dfen sch\u00fcssel mischen. die hefemischung, das eigelb und die vanille einr\u00fchren und etwa 5 minuten kneten, bis ein elastischer teig entsteht. eventuell etwas mehl hinzuf\u00fcgen.<\/p>\n<p style=\"text-align: left;\">die sch\u00fcssel mit dem teig mit einem k\u00fcchentuch abdecken und an einem warmen ort gehen lassen, bis sich der teig verdoppelt hat. in der zwischenzeit die \u00e4pfel sch\u00e4len, kerngeh\u00e4use entfernen und die \u00e4pfel in kleine st\u00fccke schneiden. die \u00e4pfel, zwei essl\u00f6ffel zucker und den zimt kurz in der pfanne schmoren, gerade bis die \u00e4pfel beginnen au\u00dfen weich zu werden. in der pfanne sollte keine fl\u00fcssigkeit mehr sein. die \u00e4pfel zur seite stellen und ausk\u00fchlen lassen.<\/p>\n<p style=\"text-align: left;\">den teig auf einer bemehlten arbeitsfl\u00e4che etwa 25 cm ausziehen. die \u00e4pfel in die mitte geben und die r\u00e4nder des teiges dar\u00fcber falten. den teig noch ein bis zwei mal falten, damit die \u00e4pfel gut verteilt sind. den teig in sechs portionen schneiden und auf einem bemehlten backblech mit einem k\u00fcchentuch abgedeckt noch mal eine halbe stunde gehen lassen.<\/p>\n<p style=\"text-align: left;\">w\u00e4hrenddessen das karamell vorbereiten. dazu eine tasse zucker und einen schluck wasser in einen topf geben und bei mittlerer hitze karamellisieren lassen. w\u00e4hrenddessen nicht r\u00fchren. wenn der zucker sich golden f\u00e4rbt, vom herd nehmen und die butter einr\u00fchren. dann die sahne\/obers dazu geben und gut r\u00fchren. zur\u00fcck auf den herd stellen und aufkochen lassen, eventuell das karamell noch etwas eindicken lassen. und schlie\u00dflich das salz unterr\u00fchren.<\/p>\n<p style=\"text-align: left;\">in einer pfanne das \u00f6l zum frittieren erhitzen. es sollte so viel \u00f6l sein, dass die pfannkuchen zur h\u00e4lfte im \u00f6l schwimmen. die pfannkuchen vorsichtig in die pfanne geben und von jeder seite etwa zwei minuten frittieren bis die pfannkuchen dunkel-golden sind.<\/p>\n<p style=\"text-align: left;\">die pfannkuchen auf k\u00fcchenpapier abtropfen lassen und mit dem karamell servieren.<\/p>\n<p style=\"text-align: left;\">guten
