be serve.<!--more--><\/p>\n<p>this salad is one of the classic pumpkin dishes i have every\u00a0pumpkin season. the sweetness of the pumpkin goes perfectly together with the saltiness of the prosciutto and the pecorino cheese. the rocket adds some crunchiness and spiciness. you can top the salad with some roasted pumpkin seeds. they look\u00a0nice and add\u00a0some extra crunch.<\/p>\n<p style=\"text-align: center;\">3-4 slices pumpkin per person<br \/>\n1 tsp coriander seeds<br \/>\n1 small dried chili<br \/>\nsalt<br \/>\npepper<br \/>\n3-4 slices prosciutto per person<br \/>\n1 handful rocket per person<br \/>\npecorino cheese<br \/>\npumpkin seeds (optional)<br \/>\nolive oil<br \/>\nbalsam vinegar<\/p>\n<p style=\"text-align: left;\">preheat the oven to 200\u00b0C.<\/p>\n<p style=\"text-align: left;\">cut the pumpkin into slices and remove the skin. pour the pumpkin slices on a baking tray, lined with baking paper. pour the spices in a mortar and crack roughly. rub the pumpkin with some olive oil and spices and bake for 20 minutes till\u00a0tender.<\/p>\n<p style=\"text-align: left;\">in the meantime wash the rocket, roast the pumpkin seeds in a pan and grate the pecorino cheese.<\/p>\n<p style=\"text-align: left;\">combine two third\u00a0olive oil and one third balsam vinegar and season with salt and pepper. marinate the rocket in the dressing, before serving.<\/p>\n<p style=\"text-align: left;\">arrange some slices prosciutto on each plate, add the baked pumpkin and a handful of rocket. finally sprinkle over\u00a0some grated cheese and some roasted pumpkin seeds if you like. drizzle over the remaining dressing and serve.<\/p>\n<p style=\"text-align: left;\">enjoy!<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">3-4 k\u00fcrbisspalten pro person<br \/>\n1 tl koriandersamen<br \/>\n1 kleine getrocknete chili<br \/>\nsalz<br \/>\npfeffer<br \/>\n3-4 scheiben prosciutto pro person<br \/>\n1 handvoll ruccola pro person<br \/>\npecorino k\u00e4se<br \/>\nk\u00fcrbiskerne (optional)<br \/>\noliven\u00f6l<br \/>\nbalsamico<\/p>\n<p style=\"text-align: left;\">den ofen auf 200\u00b0 C vorheizen.<\/p>\n<p style=\"text-align: left;\">den k\u00fcrbis in spalten schneiden und die schale abschneiden. ein backblech mit backpapier auselgen und den k\u00fcrbis darauf legen. die gew\u00fcrze im m\u00f6rser grob zersto\u00dfen. den k\u00fcrbis mit oliven\u00f6l und den zersto\u00dfenen gew\u00fcrzen einreiben und etwa 20 minuten backen, bis der k\u00fcrbis weich ist.<\/p>\n<p style=\"text-align: left;\">in der zwischenzeit den ruccola waschen, die k\u00fcrbiskerne in einer pfanne anr\u00f6stend den pecorino grob reiben.<\/p>\n<p style=\"text-align: left;\">oliven\u00f6l und balsamico im verh\u00e4ltnis zwei drittel oliven\u00f6l und ein drittel balsamico mischen. etwas salz und pfeffer dazu und den ruccola vor dem servieren damit marinieren.<\/p>\n<p style=\"text-align: left;\">auf jedem teller ein paar scheinen prosciutto und gebackenen k\u00fcrbis arrangieren. je eine handvoll ruccola darauf setzen. zum schluss geriebenen pecorino und ger\u00f6stete k\u00fcrbiskerne nach belieben dar\u00fcber geben. das verbliebene dressing verteilen und servieren.<\/p>\n<p style=\"text-align: left;\">guten
