a good piece of tender beef, medium raw. crunchy and fresh lettuces directly from the garden to the table. fully flavored homemade tarragon mayonnaise and self-made extra thin pommes allumettes made out of our own potatoes. tastes extraordinary good and feels great, especially on one of the last warm days sitting under the cherry trees.<!--more--><\/p>\n<p>there is nothing more to say &#8230; despite the fact, that i am sure you would enjoy this meal also at home and in different seasons.<\/p>\n<p style=\"text-align: center;\">beef:<br \/>\nfilet of beef, a 2-3 cm thick peace per person<br \/>\nfleur de sel<\/p>\n<p style=\"text-align: center;\">pommes allumettes:<br \/>\npotatoes, 2 per person<br \/>\n2 liter sunflower oil<\/p>\n<p style=\"text-align: center;\">salad:<br \/>\nlettuce<br \/>\n6 tbsp olive oil<br \/>\n2 tbsp tarragon vinegar<br \/>\n1 tsp dijon mustard<br \/>\nsalt and pepper<\/p>\n<p style=\"text-align: center;\">tarragon mayonnaise:<br \/>\n100 ml sunflower oil<br \/>\n100 ml olive oil<br \/>\n1 egg<br \/>\n2 tbsp tarragon vinegar<br \/>\n1 tsp mustard<br \/>\nsalt<br \/>\nfresh tarragon<\/p>\n<p>wash and peel the potatoes. cut them in very thin sticks, not thicker than half a centimeter max. wash them again and drain on a kitchen towel until they are really dry. heat the sunflower oil to fry the pommes allumettes.<\/p>\n<p>to prepare the tarragon mayonnaise put the oil, egg, tarragon vinegar, egg, mustard, salt and pepper into a high mixing bowl. set the blender on the ground of the bowl, start to blend and slowly lift the blender so that everything starts to combine to a mayonnaise. wash and chop the fresh tarragon and add to your mayonnaise.<\/p>\n<p>wash the lettuce and dry. pour olive oil, tarragon vinegar, mustard, salt and pepper in a clean jam jar, close and shake until the mixture emulsifies to a creamy vinaigrette.<\/p>\n<p>pan fry or grill your beef for about 3-4 minutes each side, or longer if you don&#8217;t like your beef medium raw.<\/p>\n<p>deep fry the pommes allumette. if the oil is preheated to 175\u00b0 C it will last no longer than 5 minutes. salt to taste.<\/p>\n<p>combine the lettuce and vinaigrette and serve with the pommes allumettes, tarragon mayonnaise and beef. serve the beef with some good quality salt like fleur de sel.<\/p>\n<p>enjoy! and an aromatic red wine like c\u00f4tes du rh\u00f4ne would be a good idea.<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">fleisch:<br \/>\nrinderfilet, ein 2-3cm dickes st\u00fcck pro person<br \/>\nfleur de sel<\/p>\n<p style=\"text-align: center;\">pommes allumettes:<br \/>\ngr\u00f6\u00dfere kartoffeln, 2 pro person<br \/>\n2 liter sonnenblumen\u00f6l<\/p>\n<p style=\"text-align: center;\">salat:<br \/>\nblattsalate<br \/>\n6 el oliven\u00f6l<br \/>\n2 el estragon essig<br \/>\n1 tl dijonsenf<br \/>\nsalz und pfeffer<\/p>\n<p style=\"text-align: center;\">estragon mayonaise:<br \/>\n100 ml sonnenblumen\u00f6l<br \/>\n100 ml oliven\u00f6l<br \/>\n1 ei<br \/>\n2 el estragonessig<br \/>\n1 tl senf<br \/>\nsalz<br \/>\nfrischer estragon<\/p>\n<p style=\"text-align: left;\">kartoffeln waschen und sch\u00e4len. in sehr d\u00fcnne st\u00e4bchen schneiden, nicht dicker als einen halben zentimeter. nochmal waschen, auf ein geschirrtuch geben und sehr gr\u00fcndlich trocknen. das sonnenblumen\u00f6l zum frittieren erhitzen.<\/p>\n<p style=\"text-align: left;\">f\u00fcr die estragon mayonnaise \u00f6l, eier, estragonessig, senf und salz in eine hohe r\u00fchrsch\u00fcssel geben. den p\u00fcrierstab auf der boden der sch\u00fcssel setzen, starten und langsam nach oben ziehen, sobald die zutaten beginnen sich zur mayonnaise zu verbinden. estragon waschen, trocknen, hacken und untermischen.<\/p>\n<p style=\"text-align: left;\">salat waschen und trocknen. f\u00fcr das dressing \u00f6l, essig, senf, salz und pfeffer in ein leeres marmeladenglas geben, zuschrauben, sch\u00fctteln, und die vinaigrette ist fertig.<\/p>\n<p style=\"text-align: left;\">das rinderfilet von jeder seite 3-4 minuten in der pfanne braten oder grillen. wer sein rinderfilet nicht medium raw mag, grillt es einfach etwas l\u00e4nger.<\/p>\n<p style=\"text-align: left;\">die pommes allumettes frittieren. bei 175\u00b0 dauert das nicht l\u00e4nger als 5 minuten. salzen.<\/p>\n<p style=\"text-align: left;\">die vinaigrette \u00fcber den salat geben und mit den pommes allumettes, der estragonmayonnaise und dem rinderfilet servieren. zum Rinderfilet etwas fleur de sel geben.<\/p>\n<p style=\"text-align: left;\">guten appetit!
