herbs &#038; green asparagus tarte \/\/ gr\u00fcnes \u00f6sterreich &#8211; kr\u00e4uter &#038; gr\u00fcner spargel tarte"},"content":{"rendered":"<p><a href=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-title.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3226\" alt=\"asparagus tarte title\" src=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-title.jpg\" width=\"700\" height=\"467\" srcset=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-title.jpg 700w, http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-title-300x200.jpg 300w, http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-title-449x300.jpg 449w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/a><\/p>\n<p>the <em><a href=\"http:\/\/http:\/\/www.kochtopf.me\/blog-event-lxxxviii-oesterreich-kulinarisch\" target=\"_blank\">austrian cuisine event<\/a> <\/em>inspired me to write this post. this tarte is extraordinary delicious and i planned to write about it already last year with our very, very first few asparagus. but last year the picture was not good enough and this spring was really busy. but here we go: my green version of austria, with lots of herbs and our own green asparagus.<!--more--><\/p>\n<p>this dish is not at all what you might expect from traditional austrian cuisine. it feels more like a modern interpretation of classically austrian regional and seasonal ingredients. the recipe is an adaption of a recipe from one of my very favorite cookbooks:<em> <a href=\"http:\/\/www.gu.de\/buecher\/graefe-und-unzer\/graefe-und-unzer\/19408-Meine-Heimatkueche\/\" target=\"_blank\">johann lafers heimatk\u00fcche<\/a><\/em>, which is particularly focused on styrian cuisine.<\/p>\n<p>please do not misunderstand me, i really love the traditional austrian cuisine. but despite &#8220;mehlspeisen&#8221; there are very view vegetarian dishes that come up my mind. so i hope everybody will enjoy this vegetarian austrian tarte. it is extra aromatic because of the mixture of a lot of different herbs. of course you can vary the mixture according to what is growing in your garden. i really recommend to include tarragon because of its very aromatic and intensive flavor. and if still available, include some bear\u00b4s garlic too. bear\u00b4s garlic is already fully in bloom, but you can still eat it, it only will loose a bit of it\u00b4s intensity.<\/p>\n<p>one very last thing i would like to highlight before sharing the recipe with you. what i really love in this recipe &#8211; despite the fresh herbs, giving flavor and color &#8211; is the idea of giving cooked mashed potatoes on the top of the pastry before adding the asparagus and herby egg-mixture. it makes the tarte surprisingly fluffy. but try by yourself!<\/p>\n<p><a href=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-complete.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3229\" alt=\"asparagus tarte complete\" src=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-complete.jpg\" width=\"700\" height=\"465\" srcset=\"http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-complete.jpg 700w, http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-complete-300x199.jpg 300w, http:\/\/foodiesgarden.net\/wp-uploads\/2013\/06\/asparagus-tarte-complete-451x300.jpg 451w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/a><\/p>\n<p style=\"text-align: center;\">\u00a0one hand full of green asparagus<br \/>\n500 g potatoes<br \/>\n50 g fresh herbs like parsley, chive, bear\u00b4s garlic, tarragon, and whatever you like<br \/>\n3 eggs<br \/>\n100 ml milk<br \/>\n150 g sour creme<br \/>\nsalt<br \/>\npepper<br \/>\nnutmeg<br \/>\n25 g butter<br \/>\npuff pastry<br \/>\n1 egg yolk<\/p>\n<p style=\"text-align: left;\">cook the potatoes for about 30 minutes and then refresh and peel them. roughly mash the potatoes and set aside.<\/p>\n<p style=\"text-align: left;\">if you take green asparagus you do neither have to peel or to precook it. in the case of white asparagus both will be necessary.<\/p>\n<p style=\"text-align: left;\">preheat the oven to 200\u00b0 C. meanwhile prepare the herb and egg mixture. therefore wash all your herbs, dry and roughly chop. combine all the herbs with the eggs, milk and sour cream in a food processor. blend the mixture until it gets this nice green color. season to taste with salt, nutmeg and pepper.<\/p>\n<p style=\"text-align: left;\">grease a retangular baking dish or griddle with butter. fit the puff pastry in a baking dish \u00a0paying attention to also form an edge. spread over the mashed potatoes and place the asparagus on top. pour over the egg and herb mixture. coat the edge of the tarte with the egg yolk.<\/p>\n<p style=\"text-align: left;\">bake for 30 minutes at 200\u00b0C on the lowest level of your oven.<\/p>\n<p style=\"text-align: left;\">and enjoy!<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">eine hand voll gr\u00fcnen spargel<br \/>\n500 g kartoffeln<br \/>\n50 g frische kr\u00e4uter, zb. petersilie, schnittlauch, estragon, b\u00e4rlauch oder was auch immer gerade w\u00e4chst<br \/>\n3 eier<br \/>\n100 ml milch<br \/>\n150 g saure sahne\/ sauerrahm<br \/>\nsalz<br \/>\npfeffer<br \/>\nmuskatnuss<br \/>\n25 g butter<br \/>\nbl\u00e4tterteig<br \/>\n1 eigelb<\/p>\n<p style=\"text-align: left;\">kartoffeln etwa 30 m inuten kochen, dann abschrecken und sch\u00e4len. anschlie\u00dfend die kartoffeln etwas zerdr\u00fccken und zur seite stellen.<\/p>\n<p style=\"text-align: left;\">gr\u00fcner spargel muss f\u00fcr dieses gericht weder gesch\u00e4lt noch vorgekocht werden. beides w\u00e4re im fall von wei\u00dfem spargel notwendig.<\/p>\n<p style=\"text-align: left;\">den ofen auf 200\u00b0C vorheizen. in der zwischenzeit kann die kr\u00e4uter-ei-mischung vorbereitet werden. dazu die kr\u00e4uter waschen, trocken schleudern und grob hacken. alle Kr\u00e4uter mit ei, milch und saurer sahne mischen und in einen hohen mixbecher geben. p\u00fcrieren bzw. mixen bis die mischung eine sch\u00f6ne gr\u00fcne farbe bekommt. mit salz, pfeffer und muskatnuss w\u00fcrzen.<\/p>\n<p style=\"text-align: left;\">eine rechteckige auflauform oder auch ein backblech mit butter einfetten. dann den bl\u00e4tterteig in die form legen und dabei darauf achten auch etwas teig zu einem rand hochzuziehen. die zerdr\u00fcckten kartoffeln auf dem teig verteilen und die spargelstangen darauflegen. schlie\u00dflich die eier-kr\u00e4uter-mischung dar\u00fcber geben und den teigrand mit dem verbleibenden eigelb einstreichen.<\/p>\n<p style=\"text-align: left;\">30 minuten bei 200\u00b0C backen, dabei das blech oder die auflaufform in die unterste schiene des backofens schieben.<\/p>\n<p style=\"text-align: left;\">und &#8230;
