elderberry-fever! after i made this extraordinary <em><a href=\"http:\/\/foodiesgarden.net\/?p=1806\">pumpkin seeds parfait with elderberry compote<\/a>\u00a0<\/em>last year, my mum cooked some elderberry jam &#8211; which is very, very delicious too &#8211; i decided to try out some elderberry ice cream.<\/p>\n<p>but as i did not have that much time, i experimented a bit with the frozen fruits combined with yoghurt &#8220;ice cream&#8221; and can share the results of my different versions.<\/p>\n<p style=\"text-align: center;\">elderberries<br \/>\n500 g yoghurt<br \/>\n3 tbsp honey<br \/>\norange juice<\/p>\n<p>first of all you have to cook the elderberries, because uncooked they are toxic. melt one tbsp honey in a large frying pan, add the elderberries, bring to a boil and simmer for one minute. they should not simmer for longer so that they remain entire fruits.<\/p>\n<p>version one: kind of elderberry frozen yoghurt.<br \/>\ngive the cooked elderberries into the freezer and freeze over night. next day pour the frozen elderberries, remaining honey, yoghurt and a little bit of orange juice in a food processor and mix until well combined. now you should have a lightly frozen elderberry yoghurt, which you should eat immediately.<\/p>\n<p>version two: elderberry yoghurt ice cream.<br \/>\nallow the cooked elderberries to cool down a little bit. then pour the elderberries, honey, yoghurt and orange juice to an ice machine and follow the instructions of your ice machine.<\/p>\n<p>version three: elderberry yoghurt pops.<br \/>\nif you have no ice machine follow version one and fill in the elderberry frozen yoghurt into your ice pop makers. if you have an ice machine, follow version two and fill in the elderberry yoghurt ice cream into your ice pop makers. in both cases i recommend to strain the cooked elderberries through a sieve, because it is more comfortable for eating ice pops.<\/p>\n<p>well, i hope you will enjoy and would be happy to hear of your experiments and experiences!<\/p>\n<p style=\"text-align: center;\">********************<\/p>\n<p style=\"text-align: center;\">hollerbeeren<br \/>\n500 g joghurt<br \/>\n3 el honig<br \/>\norangensaft<\/p>\n<p style=\"text-align: left;\">als erstes m\u00fcssen die hollerbeeren gekocht werden, weil sie ungekocht giftig sind. dazu eine essl\u00f6ffel honig in einer gro\u00dfen pfanne erhitzen, die hollerbeeren hinzuf\u00fcgen, aufkochen und weniger minuten k\u00f6cheln lassen.<\/p>\n<p style=\"text-align: left;\">version eins: hollerbeeren frozen yoghurt.<br \/>\ndie gekochten hollerbeeren \u00fcber nacht tiefk\u00fchlen. am n\u00e4chsten tag die gefrorenen hollerbeeren, die \u00fcbrigen 2 el honig, den joghurt und etwas orangensaft in den mixer geben und alles gut miteinander vermengen. das ergebnis ist ein leicht gefrorener hollerbeeren-joghurt, den man sofort essen sollte.<\/p>\n<p style=\"text-align: left;\">version zwei: hollerbeeren-joghurt eis.<br \/>\ndie gekochten hollerbeeren ausk\u00fchlen lassen und dann mit 2 el honig, dem joghurt und orangensaft in die eismaschine geben und nach den vorgaben der eismaschine verfahren.<\/p>\n<p style=\"text-align: left;\">version drei: hollerbeeren-joghurt eis am stiel.<br \/>\nohne eismaschine, einfach version eins folgen und den hollerbeeren frozen yoghurt in die eis am stiel formen geben. mit eismaschine, version zwei folgen und das hollerbeeren-joghurt eis in die eis am stiel formen geben. in beiden f\u00e4llen empfehle ich jedoch die gekochten hollerbeeren vorher durch ein sieb zu streichen, da bei eis am stiel die fruchtst\u00fccke eher st\u00f6ren.<\/p>\n<p style=\"text-align: left;\">viel spass und ich bin gespannt auf eure experimente und erfahrungen mit
